1695 - Peter the Fist created the first Imperial Office “The exclusive harvest and exports of caviar”


All caviar was under the exclusive authority of the Tzar.


18th century - nearly 80% of black caviar went for export. 


Under the decree of the Senate of March 2, 1725 it was offered to direct all income from import of black caviar to Europe to financing of the Russian military of the fleet.

Sturgeon – a two hundred million years old fish  known as “THE LIVING FOSSIL”

Some species of sturgeon  can live up to 100 years or more.

The largest sturgeon ever caught  was a 28-foot long Beluga  that weighed 4,570 pounds and caught in 1736.
