In 1873 Henry Schacht began producing domestic caviar in the US and exported it to Europe for as high as $1 per lb. There, it was labeled and sold as “Russian”.
The United States became a big caviar producer, only second to Russia.
North American bar owners served caviar from the Delaware River free-of-charge in the belief that the salty taste encouraged customers to buy more drinks!
